After years of planning, whilst building up a strong customer base through pop ups and private dining, The Counter is the fruition of the long-held dream of Robin Read to have his own restaurant. Born from a long family history of serving the best produce over a counter, Robin’s maternal grandfather was a Master Butcher in Rugeley, Staffordshire, while on his paternal side, his great-grandfather was a Greengrocer in Lewisham, South London. Together with his wife Greta Boccia, they have taken on a 200-year-old Georgian building in the heart of Royal Tunbridge Wells, which includes the main restaurant with table and counter dining, private dining room, small wine bar and courtyard garden, with raised beds and pots growing herbs, salads, and brassicas.

Offering a choice of five-, eight- and ten-course tasting menus, costing £60, £95, and £125 respectively, Robin has years of experience sourcing the best seasonal and local produce, predominantly from Kent and Sussex, but also within the British Isles. His menus are created from a love of classical cookery and a curious mind for new techniques, with dishes such as Cured mackerel croustade with broccoli purée, Birchden asparagus and seaweed; Cavolo nero cavatelli, Old Winchester & sage; Steamed brill, lobster mousse, caramelised cauliflower, and seaweed confit potatoes; and rosemary & fennel granita on the opening launch menu. The ten-course menu is offered at the counter and gives diners an interactive experience watching Robin and his team of chefs cook and plate up at the pass; the menu is more experimental, taste-testing dishes that are in development for the next month’s menus.

Robin’s vision of a modern-day restaurant is that of a responsible and sustainable one with seasonal cooking, few food miles and using every part of an ingredient. He seeks out and nurtures a strong network of small, independent farmers, growers, and producers from farm to sea and takes great care and pride to meet all his suppliers and visit their farm, forest, river, warehouse, or barn across the country. This ensures he has first-hand knowledge of the produce, and relationships with the people whose hands create, grow, or farm them.

Suppliers at The Counter include Kentish fruit and vegetables from T H Brown & Son, fish from Chapmans in Sevenoaks, meat from Fullers Butchers in Eridge and charcuterie from Beal’s. The wine programme is headed up by Greta Boccia and is a curated edit of English and European wines alongside several English spirits, such as Hepple gin and vodka and Vault vermouth and botanical spirits, on the list.

The restaurant features original artwork on display, and for sale, by Venezuelan artist RAA, a close friend of Robin and his former sous chef. The multi-media works combine acrylics, oil pastels, colour pencils and spray paint in bold and graphic shapes.

About Robin Read

Prior to opening his own restaurant, Robin was Executive Chef of the Firmdale Hotel Group for 16 years, overseeing six new Firmdale openings, including four hotels, a bakery and training academy, all with great success. He worked with head chefs in eight sites (UK & internationally) with over 200 kitchen staff, to maintain the highest of standards.

Robin began his cooking career at the age of 16 with work experience at the Roux Brothers’ London patisserie, where he trained in 1990. His love and passion of the industry continued to grow, working and training with some of the best chefs this country has produced. He spent two years at Chez Nico under Nico Ladenis as sous chef, which held three Michelin stars, before working with Marco Pierre White at Mirabelle, becoming Head Chef, and retaining their one Michelin star. Robin also spent time in the kitchens at Le Gavroche, The Square and Restaurant Paul Heathcote.

The Square Peg

The Square Peg is a 14-seat restaurant on Camden Road in Tunbridge Wells, Kent. Owned by Head Chef Rob Marshall, who cooks solo in the kitchen, the site blurs the line between a fine-dining restaurant and supper club, serving an eight-course tasting menu, with one dinner sitting.

Originally from Zimbabwe, Rob came to the UK at the age of 22 having had previous careers including a brief stint in the British Army, with The Royal Engineers and attending Sandhurst. He came to cooking later in life but has been fascinated with food and the experience of eating out from a young age. Rob is a self-taught cook by way of a well-worn collection of cookbooks, and he jokes, ‘youtube’. He says, “I wanted to pursue something I loved doing and hadn’t found my niche elsewhere. A bit of a square peg, if you like. I cook the kinds of things I like to eat - dishes of what I hope are robust flavours with contrasting and complementary textures, temperatures, and tastes.”

Rob has been finalist and a semi- finalist in both the British Culinary Federation Chef of the Year and the Craft Guild of Chefs National Chef of the Year competitions.

British culinary traditions and food culture weave their influence through the Square Peg menu, which stretches to include anywhere British food culture may have influenced or been influenced. This might translate to something as simple as a syllabub with Yorkshire rhubarb, or a hotpot alongside best end of Pevensey Salt Marsh lamb. Indian and Cantonese spices and flavours may be drawn on when the mood takes. The menu changes every 6-8 weeks and might include Oyster, Apple, Fennel and Caviar; Mallard, Shallot Ketchup, Roast Onion and Consommé; Ex-Dairy Cow, Beef fat sauce and Carrot; Pear, Honey, Hazelnut and Yoghurt, and Banana, Toffee and Milk sorbet. The set course menu is £79 and full flight of five paired wines is £45.

As a small, independent business, Rob actively seeks opportunities to support similar businesses, and the people behind them. Consequently, locality and seasonality feature strongly. The drinks list is almost exclusively British, featuring small, independent suppliers and producers. The list isn’t expansive but there is something for all tastes from still and sparkling English wine, cider, perry, beer, mead, and spirits.

Chef’s Table launches at Tallow, Kent

Rob and Donna Taylor, chef owners of Tallow in Southborough, Kent, have launched a new Chef’s Table in the upstairs dining space of the restaurant. The bespoke chef’s station seats eight guests for a seven-course tasting menu cooked by Rob Taylor, in addition to snacks and a bread course, with the further option of a tailored wine flight. Prices for the full tasting menu start at £100 per person.

The intimate dining experience will appeal to those who love the theatre of cooking and enjoy watching and talking about food as it’s cooked in front of them. Currently the Chef’s Table experience is only available on Friday and Saturday evenings, with one sitting at 7.30pm.

The December launch menu is full of wintery and festive ingredients such as Jerusalem artichokes, confit duck, gingerbread, chocolate and clementine mousse, spiced fruit, and blue cheese.

Tallow launched in November 2021 and is open for lunch and dinner from Tuesday to Saturday. Sitting on a village green in Southborough, in the leafy surrounds of Tunbridge Wells, there are 26 covers downstairs in the main restaurant with space for a further eight upstairs at the Chef’s Table.

Quince is the new restaurant by chefs and co-owners Ben Hughes and Rafael Lopez. Having spent years working together at The Goods Shed in Canterbury, this is the duo’s first restaurant launch.

Launching on Friday 27 May, Quince is on Westgate’s Station Road, just 10 minutes from the north Kent Coast and within 15 minutes of many of the restaurant’s produce suppliers. The bistro-style restaurant has 32 covers and will serve British ingredients, mostly from Kentish farms, with a southern Mediterranean flair, alongside a small list of English and other world-class wines, curated by Clive Barlow, Master of Wine.

Ben and Rafa have known each other for years, having spent the last five years working together at The Goods Shed, which under Rafa as its Head Chef for twenty years, became one of the pioneers of the farm to table movement in the UK. This market and ingredient led philosophy will continue at Quince, with the team working closely with day boat fisherman on the Kent and West Coast for seafood and fish, the Quex Estate Sussex beef and lamb, Longland Farm duck, sourdough from Staple Stores, and local farmers for vegetables and fruit.

The strong kitchen team are joined by Ben’s wife Portia heading up Front of House and by recruits in both back and front of house from The Goods Shed and Sargasso, in nearby Margate.

The menu is a happy marriage of north and south European ideals and food; Rafa will reach for the olive oil, while Ben the butter, resulting in a menu that feels comfortingly familiar and is full of Mediterranean warmth.

Private dining room opens at Tallow, Kent

The new private dining room at Tallow, Rob and Donna Taylor’s new restaurant in Southborough, Kent, has opened. Seating up to ten guests, the dining room is in a private space upstairs in the townhouse style building. The bespoke 9 course tasting menu by chef Rob Taylor includes snacks and a bread course with the further option of a tailored wine flight. Prices for the full tasting menu start at £90 per person.

New dishes on the current menu include breaded partridge breast with katsu curry mayonnaise and pickled radish; pan fried fillet of cod with crispy potato, buttered leeks and roasted prawn bisque; warm pear and gingerbread crumble tart with cinnamon ice cream.

Working for a long time together in Donna’s native Australia, the pair worked in Sydney and Brisbane in senior positions before returning to Kent to take over The Compasses Inn in Crundale, Kent. Running the acclaimed Bib Gourmand and Top 50 gastropub for 8 years, Rob and Donna achieved critical success from the hospitality industry, national restaurant critics and repeat diners, alike.

The menu showcases chef owner Rob’s unpretentious style where good ingredients are elevated with a sharp attention to detail, using modern techniques and bold flavours. Coming from East Kent, Rob Taylor brings with him a wealth of local suppliers who source from the Kent larder - game birds, mushrooms, oysters, cherries are all local. The menu offers three starters, three main courses and three desserts with a nine-course tasting menu available in the private dining room, alongside an interesting and small edit of wines. Sample dishes include treacle cured beef, glazed ox cheek, braised baby gem and English mustard clotted cream; Stour Valley quail with Kentish cherries and black pudding; crispy confit lamb, mint pesto and goats’ curd; roast loin of venison, celeriac puree, pickled girolles and potato terrine; roscoff onion and cheddar cheese tart and pickled walnut ketchup and for dessert, pressed apple mille feuille and caramelised mascarpone.

Tallow’s design is confidently pared-back providing a cocooning dining space with exposed brick, weathered wood and a log burning stove. The walls are painted a rich liquorice shade that make for an interior to feel grounded and comforted in.

Tom Kerridge said: “After the year we’ve had, I think everyone deserves a good-knees up - and what better way to do it than Pub in the Park! We’re so excited to be doing what we do best, bringing back our feel-good festival to the towns we love and filling it with lush music and proper good food!”

During the weekend, Pub in the Park will stage a special session called A Thousand Thank You’s, by providing free tickets to local health care heroes and key workers across NHS trusts, the emergency services, and local people. That’s 8,000 Thank You’s across the whole tour. 

Tom Kerridge continued: “Key workers have been the true superheroes of this pandemic, and we want to say thanks by offering 1000 complimentary tickets in each of our towns so these superstars can let their hair down while enjoying some awesome music and lush grub.” 

Pub in the Park has been designed with public health restrictions in place and has been awarded the Visit Britain ‘Good to Go’ certification, meaning the tour will have covid-safety measures in place if needed, but as government restrictions ease so will the events.

The Small Holding at Home

The Small Holding at Home is an exceptional dining experience safely delivered to your doorstep from Will Devlin and his chefs at The Small Holding in Kilndown, Kent. The Small Holding team have done all the prep and hard work meaning all that is needed is to add the finishing touches, plate up, and enjoy.

Creating a restaurant quality experience at home is now possible. Using fresh from the ground autumn and winter produce from the farm, The Small Holding team have created three different set menus, with additional bread, charcuterie, cheese plate, wines, beers and soft drinks to choose from, too. The menus will change each week so there will also be a new dining experience from The Small Holding to try at home. Custom from the At Home meals are vitally important as Kent is in Tier 3.

Each menu includes several ready to serve dishes such as home smoked salmon, slow cooked goat terrine or apple and cobnut cake. The main course for each menu has a few elements to be finished at home such as bone in pork chops from The Small Holding’s own rare breed Large Black pigs, hand-dived scallops from Orkney and pan roast venison loin. Each of these elements come with full and easy instructions from chef Will Devlin.

Each menu is available to pre-order for local delivery or collection on Friday or Saturday night and costs from £35 per person.

The Small Holding at Home is an exceptional dining experience safely delivered to your doorstep from Will Devlin and his chefs at The Small Holding in Kilndown, Kent. The Small Holding team have done all the prep and hard work meaning all that is needed is to add the finishing touches, plate up, and enjoy.

Creating a restaurant quality experience at home is now possible. Using fresh from the ground autumn and winter produce from the farm, The Small Holding team have created three different set menus, with additional bread, charcuterie, cheese, wines, beers and soft drinks to choose from, too. The menus will change each week so there will also be a new dining experience from The Small Holding to try at home.

Each menu includes several ready to serve dishes such as hot smoked trout, slow cooked goat terrine or apple and cobnut cake. The main course for each menu has a few elements to be finished at home such as bone in pork chops from The Small Holding’s own rare breed Large Black pigs, hand-dived scallops from Orkney and pan roast duck breast. Each of these elements come with full and easy instructions from chef Will Devlin.

Each menu is available to pre-order for local delivery or collection on Friday or Saturday night and costs from £35 per person.

After three months of lock down, The Small Holding in Kilndown, Kent will reopen its doors, large terrace and garden on 17 July with reservations open for July, August and September.

Named ‘Chef to Watch’ in the Good Food Guide 2020, chef owner Will Devlin says, “As with all restaurants, especially independents with no financial backing, the last three months have been tough. However, it’s given me the opportunity to focus on our purpose and reason and to remember what The Small Holding is about, which is the deep connection between the farm and kitchen and a sense of place. We nearly lost it all and we need to remember what we’re fighting for. Lockdown has been a massive opportunity to realise that.”

From 17 July, the new menu will be defined by hyper-seasonal ingredients with a focus on the farm’s own produce, but undefined by the number of courses or choice. There will be no formal menu at The Small Holding. Instead, guests will be offered a multi-taste dining experience featuring the best ingredients on that day from the farm and local suppliers. Vegetables and fruits from the farm, harvested within hours of guests arriving, foraged ingredients, homemade charcuterie and zero waste animal cookery from the farm’s own livestock will be the main focus.

The restaurant will be open Thursday to Saturday for dinner costing £75 per head and for lunch, with a shorter menu, on Saturday and Sunday, costing £55 per head. A drinks flight including juices, shrubs, wines, beers and kombucha will also be available.

On Wednesday’s the whole team will work on the farm and on research and development.

The Small Holding will continue to sell BBQ and breakfast hampers, vegetable and cheese boxes and the new Wine Club offering which were all launched online during lockdown.

The Small Holding in Kilndown, Kent has launched a new BBQ box for local delivery, in addition to its home-grown and organic vegetable boxes and stay at home picnic hampers.

Just in time for the May bank holiday, The Small Holding BBQ box is suitable for 2-4 people sharing and includes two of each beef burgers, chicken kebabs, pork sausages and pulled pork plus buns, flat breads and burger garnish. Also included are tubs of coleslaw, BBQ beans, wild garlic pasta salad and pickled red cabbage. This fantastic feast of a box costs £55 while also for sale on the online shop are beers and wines from local Kent and Sussex producers including Squerryes, Greensand Ridge, Chapel Down and Long Man Brewery.

The new BBQ box is the newest offering from The Small Holding team who are also selling weekly vegetable boxes (£35) with produce grown on site at The Small Holding and from local farms. Celebrating the best of the season with local asparagus, strawberries, beetroot, new potatoes, rainbow chard, carrots, herbs, garlic and more.

The BBQ boxes, vegetable boxes and hampers should be ordered by 5pm each Wednesday for delivery on Friday or Saturday depending on delivery postcode.

The Small Holding at Home and farm pop up shop has launched for business today, Monday 23 March.

Guests can experience a taste of The Small Holding from their own home after collecting a ready-made hamper of local Kent and Sussex cheese, chutney and crackers, house made charcuterie, freshly made bread and local wines and beers. Or take away a restaurant standard three-course meal, including fish pie and ginger cake with rhubarb and cream cheese. Collection of hampers and meals are from 12-9pm.

The Farm shop will be open Monday-Sunday from 8am-8pm and selling a wide variety of home-grown vegetables from the small holding plot including chard, purple sprouting, radishes and leeks and dairy such as cream, milk, eggs and cheese. Fresh meat and fish such as pork shops, sausages, whole chickens, mackerel and cod are also for sale.

All produce and hampers will be sold with zero contact.

Named ‘Chef to Watch’ in the Good Food Guide 2020, Will Devlin says, “We’ve had to reinvent ourselves in this last week and are working exceptionally hard during this unprecedented situation to keep tasty food and drink on the table of our valued guests. There are going to be more challenges and uncertainty over the next few months but we’re lucky that the weather is warming up and the farm will soon be in full production. It’s been brilliant so see everyone in our teams and local producers and suppliers such as Hinxden Dairy and The Pure Meat Company really rallying together through this tough time.”

Spring-Summer dates 2020

Go foraging this year with Will Devlin, chef owner of The Small Holding. Starting in May, when everything is green and fresh, guests will discover the rich bounty of nature’s wild larder. From dandelions and wild garlic in Spring to elderflower and wild strawberries in early Summer through to damsons, sloe berries, chanterelles and cobnuts in Autumn, the countryside is full of edible delights; you just need to know when and where to look.

The Small Holding ‘Farm and Forage’ days start at the restaurant at 9.30am with coffee and warm, homemade pastries before pulling on wellies and heading through the gate into the farm. After feeding the pigs and chickens, guests will walk amongst the poly tunnels and raised beds learning about the 200 varieties of fruit and vegetables being grown on site. Then guests will venture down the lane with Will to the woods and fields to go foraging and learn about what’s in season and what is best to eat. By May, Spring will be in full throttle and fully green and guests can expect to find carpets of wild garlic, wild fennel, wood sorrel, yarrow, nettles, sweet cicely, dandelion, chickweed, garlic mustard and maybe even morel mushrooms if they’re lucky.

Returning to The Small Holding, guests will be greeted with a glass of awarding-winning Squerryes’ English sparkling wine before being seated for either a Full or Half Acre tasting menu. Sample dishes might include Asparagus, Lovage and Mustard; Hogget, Fennel and Chilli; Lettuce, Mushroom and Dill; Strawberry, Basil and Elderflower.

The Farm and Forage days are available on the third Wednesday of the month between May and September and is priced at £145 for Farm and Forage and a 5 course Half Acre menu or £195 for Farm and Forage and a 10 course Full Acre menu. Both experiences include a welcome glass of Squerryes’ Vintage Brut, a local and award-winning English sparkling wine.

Dogs and muddy boots are welcome too. Combining country comforts with contemporary flair, May Farm retains the charm of the original threshing barn with wooden timbers and exposed brick walls.
